• 1 tbsp olive oil
• Half brown onion (diced)
• 60g fresh spinach leaves
• 200ml cooking cream
• 100g pine nuts (optional)
• 500g packet pasta
• 1 packet Barkly Smokehouse smoked chicken breast (chopped)
• Grated Parmesan cheese (to serve)
• Salt & pepper to taste
1 - Put a large pot of salted water on to boil. Once water has boiled, add pasta.
2 - Preheat a medium to large frypan on medium heat. Add olive oil, diced brown onion and pine nuts. Cook until onion is translucent, then add chopped smoked chicken breast. Cook until chicken has heated through.
3 - Add cooking cream, salt and pepper and slowly heat all ingredients.
4 - When the pasta is cooked, drain it, reserve half to one cup of the cooking water.
5 - Immediately, toss the pasta in the pan with the onion, pine nuts, smoked chicken breast and cooking cream. Add fresh spinach and stir through.
6 - Then remove from the heat and add the reserved cooking water. Stir together quickly.
7 - Serve immediately with some grated parmesan on top.
